Total Time: about 5 minutes

Baking/Microwave Time: 50 seconds - 1 minute

ALSO INCLUDED: optional vegan-friendly steps and ingredients

Serves: 1 person

You’ll need:

  • A mug

  • Measuring spoons

  • Something to mix with

  • A small bowl (optional)

Ingredients:

  • 1 egg yolk OR ¼ cup unsweetened applesauce

  • 1 ½ tbsp granulated sugar

  • ¼ tsp vanilla (extract or flavoring)

  • 1 tbsp butter (melted) OR 1 tbsp coconut oil

  • 3 tbsp all-purpose flour

  • ¼ tsp Baking powder

  • Pinch of salt

  • Sprinkles (optional)

  • Powdered sugar (optional)

  • Milk (optional)

  • Food coloring (optional)

  1. In a small microwave-safe bowl or mug, mix together the egg yolk, sugar, vanilla, and melted butter. For a vegan alternative, swap out the egg yolk with applesauce and the butter with coconut oil.

  2. Add in the flour, baking powder, and salt (with an optional touch of sprinkles) and mix until well-combined.

  3. Place the mug in the microwave for 50 seconds.

  4. For icing (optional), take a small bowl and mix powdered sugar and milk (any type of milk is fine). I used 4 tbsp of powdered sugar and 1 tsp of milk because I love icing, but you can cut the recipe in half (or not use icing at all) if you’re not inclined to excess sweetness.

  5. Spread the icing on top, decorate with sprinkles, and eat the cookie out of the mug with a fork or spook!
